Ingredients
- 115g butter (plus another 115g at room temperature)
- 55g brown sugar
- 95g sugar
- 1 egg
- 1 teaspoon vanilla extract
- 170g plain flour
- 4 digestive biscuits, crushed into crumbs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 130g icing sugar
- 90g SKIPPY® Smooth Peanut Butter
- 275g milk chocolate chips
Directions
- Cream together 115g butter, caster sugar and brown sugar in a food mixer until smooth. Add the egg and vanilla.
- In a separate bowl, whisk together the biscuit crumbs, flour, salt and baking powder. Slowly add the dry mixture to the wet mixture on a low speed until combined.
- Spread the dough into a greased 23-cm square glass baking dish. Bake for 20 minutes at 175°C, or until lightly golden on top. Allow to cool.
- Using an electric hand mixer, mix the peanut butter, icing sugar and 60g of butter together. Press evenly onto the biscuit layer.
- Place the chocolate chips and the remaining butter in a microwaveable bowl. Heat for 30 seconds, stir, heat for 30 more seconds, and stir again until smooth and melted. Pour over the peanut butter layer.
- Allow to cool completely. Cut into bars to serve.
