Ingredients
- 2 tablespoons SKIPPY® Super Crunch Peanut Butter
- 2 tablespoons light mayonnaise
- 1 tablespoon cider vinegar
- 1/2 teaspoon grated peeled root ginger
- 1/2 teaspoon sugar
- 340g shredded broccoli
- 1 medium tomato, chopped
- 2 tablespoons chopped fresh coriander
Directions
- In a large bowl, combine the peanut butter, mayonnaise, vinegar, root ginger and sugar.
- Add the shredded broccoli, tomato and coriander; toss well. Serve chilled or at room temperature.
