Ingredients
Muffins:
- 235g flour
- 2 scoops vanilla protein powder
- 1 ½ teaspoons baking soda
- ½ teaspoon salt
- 1 cup mashed banana (about 3)
- 175g honey
- 130g SKIPPY® Creamy Peanut Butter
- 2 eggs
- 80mL vegetable oil
- 40g brown sugar
- 1 teaspoon vanilla
Streusel Topping:
- 55g brown sugar
- 2 tablespoons flour
- ⅛ teaspoon cinnamon
- 2 tablespoons rolled oats
- 2 tablespoons butter
Directions
- Heat oven to 400° F. Line a 12-cup muffin pan with paper liners.
- In medium bowl, combine 1 ¾ cups flour, protein powder, baking soda and salt.
- In large bowl, beat together mashed banana, honey, peanut butter, eggs, oil, brown sugar and vanilla. Beat in flour mixture until just combined. Spoon batter evenly into muffin cups.
- In small bowl, combine streusel topping ingredients with fork until crumbly. Sprinkle topping evenly over the tops of batter in muffin cups.
- Bake 18 to 20 minutes or until wooden pick inserted in center of muffins comes out clean.
